The team behind 2941 Restaurant opened their sister restaurant, Pizzeria Orso in June 2010. The 117-seat restaurant specializes in traditional Neapolitan pizzas, and traditional Italian and Mediterranean influenced comfort foods.

About The Location
The Pizzeria Orso Team selected the location based on the City of Falls Church City planned growth. The city’s development was the determining factor in selecting our location. The plan promised a two-phase build-out over a number of years that included retail space, offices, apartments, townhouses, active adult condominiums, hotels, and a new bowling facility. When the Falls Church City development is complete, Pizzeria Orso will be a short walk from this new city center.
How did you choose the name?
"Orso"means bear in Italian - and naming restaurants is “a bear…”

Who designed your logo?
Rodo - Rodo is an architect, and he was also an illustrator. He did the illustrations in the “In Bocca” series of Italian cookbooks. When it came time to design a logo for Orso, we contacted him in Italy to design our logo.
What is the connection with 2941 Restaurant?
The same ownership group, the same dedication to service and quality and the same Executive Chef, Bertrand Chemel.
What is Neapolitan Pizza?
Neapolitan Pizza is a very special method of making pizza. The recipe for a true Napolitano Pie is a combination of special dough, special dough handling and storage techniques, ingredients and a wood-fired dome oven operating at roughly 800ºF. Pizzas cook for no more than 90 seconds. Everything must be just right from the temperature of the oven to the authenticity of the ingredients, right down to the proper technique.
What is involved?
1. A Wood-Burning Oven: Pizza Napolitano is cooked in a wood-fired dome oven operating at roughly 800ºF.
2. The standard ingredient list is the essence of simplicity. Each pizza contains a special blend of flour, salt, yeast, tomatoes, mozzarella, and basil. We strive to use only fresh, all-natural, non-processed ingredients.
3. The pizza dough is kneaded by hand. We do not use any mechanical dough shaping tools. We never freeze our dough.
What is the importance of a wood-fired oven?
A wood-fired oven can maintain a higher temperature than a regular oven. Many brick-oven pizza restaurants use gas ovens that tend to top out at around 600 º or something. A specialized wood oven like the one we have regularly reaches 900 º or more. With a wood oven you can always experiment, you can always work on your wood quality or other special fire management techniques to make the pizzas taste a little better. It is all about the heat of the oven and the experience of the guy making the pizzas. You cannot just throw a novice in front of one of these ovens. It takes training, knowledge of the fire, the oven, and a special feel for heat to create the perfect pie.
